Few words abour the Cabécou :

This little cheese contains its creaminess under a white striped rind. The Cabécou is a medium refined cheese (from 10 to 12 days) which develops a taste of goat characteristic but still delicate with a light taste of hazelnut.

As the regular Cabécou some gourmets wait until its rind became over flowered and develops a stronger taste.
