Few words about the Briquette de brebis :

This cheese has been made for centuries in our region. At first it was made from the milk which wasn’t needed for the Roquefort.

Nowadays it has a real fame thanks to is particular taste of nuts.The Briquette de Brebis is savoury but not strong. The flowered rind which is covers it gives to this cheese a smooth texture.
